 Quinoa and Black Bean Salad:


Ingredients:

- 1 cup quinoa cooked and cooled




- 1 can black beans, rinsed and drained




- 1 red bell pepper, diced




- 1/2 cup corn kernels(fresh,frozen or canned)




- 1/4 cup fresh cilantro, chopped





For the Dressing:


- 2 tablespoons lime juice 




- 3 tablespoons olive oil




- Salt and pepper to taste




Instructions:

1. Rinse the quinoa under cold water.In a medium saucepan,combine the quinoa and water and bring to a boil.Reduce heat to low,cover,and simmer for about 15 minutes or until the quinoa is cooked and water is absorbed.Flluf with a fork and let it cool.

2. In a large bowl, combine cooked quinoa, black beans, bell pepper, corn, and cilantro.

3. Whisk together lime juice, olive oil, salt, and pepper in a small bowl.

4. Toss salad with dressing and serve.

5.Chill in the refrigerator for atleast 30 minutes before serving to allow the flavours to meld.
